1. How long to cook so its not red inside but not over cooked?
2. Seasoning/Marinade? I usually do only salt and pepper but I was watching a cooking show saying ground pepper burns and can make it taste bitter? Any truth to this?

Cooking time really depends on your grill and how high you have the heat. For medium steaks that are roughly 1 inch thick, I set my grill on high, let it heat up for 10-15 minutes and then cook the steaks 4-6 min per side. I always start out with room temp steaks and never freeze them before hand, that really dries out the meat.
My favorite seasoning/marinade is the Hamburger/steak rub from Colorado Spice. You liberally coat room temp steaks with the seasoning and cook them like normal. Quite literally the best steak seasoning I have ever come across.
Not sure what steak sauce you came across, there are hundreds of recipes out there. You can google recipes for ';Green Goddess'; which is a good one or some white sauces can be horseradish based to. Good luck! This made me hungry just thinking about it!Grilling Steak Tips and Advice?
